Well written---, deserves appreciation. Sheer Chai is the Kashmiri delicacy after lunch.KP's call it Sheer Chai,while it is also known as Noon Chai. Some also drink Noon Tyoth--that is the same tea without milk. It is considered to be digestive drink. It has been observed that Kashmiris enjoy Sheer Chai, in Diaspora as well.

My mom used to make it only when any eldely kashmiri lady would come to our home and then I used to tell her can I also get little. I make my pink from green tea leaves but boiling time for these is quite short and there is no need to add baking soda either.
After boiling the leaves for five minutes, aeration with cooking spoon for a minute or so turns the brew to burgundy colour. When about a tablespoon of milk is add, it gives a tea with a lovely deep and bright pink colour. Added By Nasiwise - |
